To stay on top of changing tastes, restauranteurs may need to adapt. This opens markets for new suppliers like the Broken Wagon Bison Farm in Illionis. Bison meat has been growing in popularity due to its increased protein content, low fat content, and richer taste.
The brothers who run the farm got into the business after they visited another bison farmer. Their farm which has been around since 2003 now herds 103 bison, including 3 bulls. The biggest challenge according to the brothers is making sure all those bison have enough hay to keep them fed!
They sell the bison meat to local restaurants as well as in their own shop attached to the farm. Don't call them cowboys though. Cowboys never herded bison!
